Economy seating on the Airbus A321 is configured 3-3 (A,B,C - D,E,F). The best seats are in or near the exit rows, although you will have to pay extra for these. Rows 11 and 26 are by the exit doors, but seats 12A and F provide unlimited room.
If you don't want to pay to stretch out, consider seats 25 B and E, as these will give more elbow room.
